(More customer reviews)Those who are very serious about kitchen knives tend to buy German knives like Wusthof, Messermeister, or F. Dick, or they buy Japanese knives. If you cook in the Classical French style, you probably are better off with German knives. If you have little or no need to split lobsters, cut chickens in half or chop off the bottoms of chicken drumsticks, then you might be better served with Japanese knives.Personally, I enjoy using both styles. The Japanese knives are thinner, have more acute cutting angles, and are sharper right out of the box. Therefore, they cut much more easily than German knives.Downside? The cutting edge is more fragile. You don't want to chop lobsters and chickens with them (unless you are using a Japanese deba). There are many excellent brands of Japanese knives to choose from:Masamoto, Misono, Masahiro, Suisin, Kikuichi, Nenox, Mac, and so on.
This little Suisin Petty Knife is a wonderful utility knife, or small chef's knife.Very, very sharp, and very well designed and crafted.Forget those serrated knives for cutting tomatoes.Buy one of these instead.Korin is a great place to buy it.
