Before I buy a knife, I have to hold it and fiddle with it to make sure it's properly balanced.I have to see that the bolster (the flared bit between the blade and the handle) is big enough to act as a brake, but not so large as to be a nuisance.I have to check the pamphlet to see that it's made from a good quality stainless steel.
