The best knives I've ever owned, bar none. They come with a razor edge and are easy to re-hone with just a few strokes on the Kershaw-Shun steel (well worth purchasing to accompany this set). The damascus pattern and perfectly crafted profile slice through darn near anything (food-like anyway) with ease. I also got a 9" scalloped slicing knife and sharpening steel to round out the set. The weight and balance are perfect. They are designed for right-handed chefs with a d-shaped handle so if you are a leftie they may not be as comfortable or easy to use.

Would I have purchased this if I didn't own other Shuns?No.Is it worth the additional investment?Yes.I've had three previous carving forks.The only one that has survived is my All-Clad.

You can really tell the difference in craftsmanship.This fork has a substantial weight.As with all Shun's, the design is simple, yet beautiful.It feels good in the hand.The handle does not have the famous D-shape.

Use this fork to make a beautiful impression.

I've been cooking for over 15 years (I'm not that old), and I grew up in a Chinese family. A Chinese Chef knife is exactly that, it is not a cleaver, despite the resemblance. This is the one knife a Chinese chef will use in the kitchen for just about everything.
Trust me, I've tried cleavers, they are not a replacement for a real Chinese Chef knife. I've also used many of the Chinese Chef knives that you can pick up in many Chinatown shops and Asian specialty shops. (BTW, I'm from the largest Chinese community outside of Asia, so we are not lacking the "goods").
The Shun classic....is amazing. It is perfectly weighted, and the grip is fantastic. I can grip the knife with confidence even when wet or dealing with meats.
The blade is the sharpest I've used of _any_ Chinese Chef knife. The first time I used it, I was mystified why it took so much effort to cut (it was supposed to be sharp, wasn't it?). The reason was, I had already sliced through everything without noticing and was already pressing on the cutting board!
One problem is that it also cuts into my cutting board with relative ease. If I don't remove the blade straight up, I hear a sound which makes me think the thin edge is being knicked. However, so far, no real problem, the edge is still perfect.
I have still been a bit wary to use it to hack at bones, but I think that fear will go away. (When I say Chinese chef's use it for everything, I mean everything).
I don't care about a Damascus steel look, but I can attest that the surface has no problems with releasing food. Slides off easily.

Shun. What more needs to be said??? It is simple, Shun is the best all around. Will you pay more? Sure you will but you will never have to buy a replacement in your lifetime. Shun knives are the best in the world, no question.

This is very very sharp and Dangerous. 4 people have cut themselves on my knife. No one believes me when I tell them how sharp it is. It Really Really Sharp! which is great if you know how to use it. My Veggies are scared when I take it out knowing they will meet their demise in a few short seconds.

More than just a celebrity endorsement, the Food Network's Alton Brown was instrumental in designing Alton's Angled knives for Shun. This 4-inch paring knife has a 10-degree angle added to the handle to create a natural curve between the blade and the user's arm that makes controlling the blade even easier and more precise. The angle was added at the request of Alton Brown, host of the long-running Good Eats cooking-as-science show on Food Network, who found that his knuckles kept hitting the cutting board. To save his and your knuckles, Shun and Brown developed this line of angled knives that enables users to both firmly grasp the knife and fully contact the cutting board with the blade.
The blade is made from VG-10 steel with a high carbon content for a higher density. This allows the steel to be tempered to a Rockwell hardness of 61, and still have the flexibility and strength to take and keep a perfect edge. The natural tendency of VG-10 is to remain straight and true, so when it is used, the edge of the blade naturally straightens out and stays sharper longer. Shun's cutting edge is ground to an angle of 16 degrees making them extremely sharp; compare this to the best German knives which are only ground to only 22 degrees. The exotic Japanese steels used in the cutting core of our knives allow them to hold these razor sharp edges without the need for excessive re-sharpening.
Shun knives rely on traditional Japanese construction methods, including a full composite tang, in order to ensure the best balance. The D-shape of the stainless steel handle is designed to tuck into the palm and provide more control to the user by leaving less space between handle and hand (the handle also fits nicely between the thumb and fingers of a left-handed user). This knife is backed by a lifetime warranty. Dishwasher safe, though hand washing is recommended. Made in Japan. NSF approved.
