Would I have purchased this if I didn't own other Shuns?No.Is it worth the additional investment?Yes.I've had three previous carving forks.The only one that has survived is my All-Clad.

You can really tell the difference in craftsmanship.This fork has a substantial weight.As with all Shun's, the design is simple, yet beautiful.It feels good in the hand.The handle does not have the famous D-shape.

This set is a good value for the money.Wish it had a bread knife in the set but easy to get one that goes with the set.The non-wood handles are my preference in that they won't stain, splinter, or chip. The steel works well on these knives.

This is a awsome knife. Super sharp. Great weight and easy to use on Veggis, Seafood, Sushi, Beef etc. Cut Salami or Carrots paper thin. The slices will fall right of the side, no more sticking to the blade! Great for chopping as well. I have almost all the 4 Star Henckels and I love them all and this one stands out. I can highly recommend this great tool. The same Santoku knife also comes in 7 inch lenght (for only ten dollars more) in case you are interested.

For the price, these are fantastic knives. I've had no problems with them at all - and they're quite sharp. Best not to put in the dishwasher. They will rust if water stands on them, and the handles don't respond well to the dishwasher. The blades are thick and sturdy, unlike many steak knives in this price range. Treat them right and they will last! I'd buy them again.

I am writing this review to affirm and expand upon the earlier review posted by NJOY. These knives, if cleaned in a dishwasher, will indeed rust immediately.

I purchased this set in May 2007 as a gift for my wife. Both of us lead busy lives and were happy to come across this set, which was strongly recommended by Consumer Reports and had packaging touting the knives as "dishwasher safe." We sadly found the packaging claim to be a baseless marketing ploy, and have lost faith in Consumer Reports for not exposing this obvious flaw.

A complaint to Chicago Cutlery yielded a response saying the knives "are made of high carbon stainless steel which unfortunately does rust" and that "to avoid rust, the blades have to be kept well oiled." It should be noted that there are no such disclaimers or instructions in the set's included Care Guide. Also, despite the company's Lifetime Guarantee promising that "any piece found to be defective will be repaired or replaced at no charge," the company only offered to send some oil to help in rust removal.

I strongly advise against purchasing this product or any Chicago Cutlery items. Instead, find a manufacturer who stands behind their product and engages in honest marketing.

First a little background. I have always been interested in cutting utensils; own tons of pocket and hunting knives so a few months ago decided to upgrade the kitchen cutlery from a Sabatier starter set.

Kicked off with a Farberware 23 piece classic forged set. From there have added knives from Anolon (a 9 piece set and Santoku), Calphalon (Katanta), Henckels, Sabatier, and Wusthof. Also bought a Waring electric knife sharpner so I did not have to Lansky when steeling did not bring back the edge. I mean anything worth doing is worth overdoing. The only knife I wanted to add I did not have was a 10 inch chef.

Looked around and decided to try the Mundial. The granton edge Future at Amazon was easily the best price anywhere on a forged 10 inch chef (even less than most stamped) and since I did not have a metal handled knife this was easy choice.

When I unpacked was literally "love at first sight". Balance was just right, handle felt great, edge was extremely sharp and smooth, blade had a nice bell ring and over-all appearance was in a word awesome. Makes you want to slice, dice, cut, carve, puree and peel.

Probably best said quoiting a surgeon friend of mine who is no stranger to a cutting instrument; this is an awesome piece of steel just makes you want to go out kill a deer and start processing. Sorry to some folks but to a lot of us PETA is people eating tasty animals.

In summation the best looking, feeling and handling kitchen knife I own.

After revewing knife sets and checking CR recommendations I decided to purchase this set. CR said that Chicago cutlery was the way to go if you do not want to spend a small fortune on knifes that were still of decent quality.

This is the first time I buy something that did not have a review and the first time I write a review because I was so upset with the quality. The knife are not sharp, and they rust - and the block is cumbersome and the inserts that hold the knifes come out - it was actually missing one when it arrived.

I hastened to open it and set it up before I noticed, otherwise, if I still had the box, I would have returned it.

The block contains a nice mix of steak knives, scissors and utility knives.The handles are lightweight plastic, so the knives don't contribute much to the cutting action - you'll get a good workout cutting up lots of fruits and veggies with these.The knives seem to stain and spot pretty easily, as do most cheap utensils.If you have deep pockets, you're probably looking at brand-name cutlery anyway, so you'll give these a pass.However, if you're looking for an inexpensive set of knives to "make do", these will do nicely.

I should start by saying this is not a true santoku.The reason I say this is because the edge has a considerable rocker to it (curve), unlike the traditional and much flater santoku blade.In fact, the rocker is much closer to the shape of a regular chef's knife.The good news is that this means people accustomed to western chef's knives can jump right into this knife.The bad news?If you're used to a flater santoku this knife will not chop as much (since less of the blade is in play) and it's a little harder to use this blade to scoop the things you've just cut.If you like to rock-and-chop, this knife will do it better than any other santoku.If you like to drop-chop, then this knife isn't going to get quite as long a chop.I like both, so I'm quite happy the knife can perform both jobs.

As advertised, this knife comes with one of the sharpest factory edges you could ever ask for.So far the edge holds up extremely well, a few stroke on the steel and knife edge remains razor sharp.

The knife comes in a nice presentation box, which although pretty, does not present a good way to carry the knife.If you plan on using this outside your house, buy a blade guard or a carrying case.Also, if you're buying a knife this nice, let me recommend that you get a hardwood edge-grain cutting board (or plastic, for you germaphobes).Don't cut on glass or tile, and any other such silly new-tech board.If you're going to pay big bucks for an nice knife, do what it takes to keep it nice.

About actual use: The knife is extremely well-balanced, although I find that the location of the balance take a little getting used to.If you use a standard chef's pinch grip, you will find there are actually two places you could grip the knife.The first place is where the handle curves into the blade.If you look at the picture, you will see this is actually a half inch or so back from the full face of the blade.If you pinch the knife here, you will find the balance to be off slightly, and your index finger will probably fatigue from being wrapped where it is.Also, since you will not be pinching the full face of the knife, you won't get the fine control that the chef's pinch is designed to give.

So, why would you do this?If you're not used to this knifes design you might because of the short part of the tang that extends from the pakka handle.On most chef's knives, your middle finger would wrap around the very front of the handle.You need to break that habit with this knife, because your middle finger actually wraps around the protruding tang, and your ring finger is the first one to wrap around the pakka handle.

If you do this, and pinch the full portion of the blade, the balance of the knife is wonderful.It is lightweight, and chops and slices extremely well.Unfortunately, the knife was definitely made for right handers (good for me, since I'm right handed, but bad for you lefties out there).Not only does the "D" shape of the handle favour a right handed palm, but the blade of the knife is actually off-set from center to the left.That means if you look straight down at the spine of the blade, it is set slightly to the left.This is good for right-handers since it makes the pinch easier (more room to curl the index finger along the face of the blade, and less power needed from the thumb to hold the knife balanced).I tend to think this off set would probably adversely affect left handed use.But, if you're thinking about getting this knife and you're left handed, I'd say go ahead and order it from Amazon.If it doesn't work out, send it back (and post your comments for other left handers!).

As for the scallops, a lot of people ask me if they work.This is what I say: if you're looking for some magical solution that will keep *all* thin-sliced tomatos or mushrooms from sticking to your knife during quick chopping, no, they don't work.If you're looking for something that will help decrease the stickage factor, then yes, they work.Is it worth the $20 price difference?Well, it was for me, but then, I cut a lot of stuff that tends to stick to the blade, so even a little extra help is appreciated.

Overall, for ease of use, Kershaw/KAI has created a superlative product in their Shun line.The knives look great.They are well-balanced.The factory edges are razor sharp.The handles fit a right-handed person extremely well.The materials used are absolutely top notch, and should stand up to a lifetime's worth of residential kitchen use.And, since they are stainless steel, cleaning and maintaining them is a breeze.

I would recommend this knife to anyone who really wants to have a great knife in their kitchen.

I've been cooking for over 15 years (I'm not that old), and I grew up in a Chinese family. A Chinese Chef knife is exactly that, it is not a cleaver, despite the resemblance. This is the one knife a Chinese chef will use in the kitchen for just about everything.
Trust me, I've tried cleavers, they are not a replacement for a real Chinese Chef knife. I've also used many of the Chinese Chef knives that you can pick up in many Chinatown shops and Asian specialty shops. (BTW, I'm from the largest Chinese community outside of Asia, so we are not lacking the "goods").
The Shun classic....is amazing. It is perfectly weighted, and the grip is fantastic. I can grip the knife with confidence even when wet or dealing with meats.
The blade is the sharpest I've used of _any_ Chinese Chef knife. The first time I used it, I was mystified why it took so much effort to cut (it was supposed to be sharp, wasn't it?). The reason was, I had already sliced through everything without noticing and was already pressing on the cutting board!
One problem is that it also cuts into my cutting board with relative ease. If I don't remove the blade straight up, I hear a sound which makes me think the thin edge is being knicked. However, so far, no real problem, the edge is still perfect.
I have still been a bit wary to use it to hack at bones, but I think that fear will go away. (When I say Chinese chef's use it for everything, I mean everything).
I don't care about a Damascus steel look, but I can attest that the surface has no problems with releasing food. Slides off easily.

I have used Global knives professionally as a Chef/Restauranteur and at Home for many years. I still have the first Global I ever bought the 11" Forged Chefs Knife it has done alot of serious cutting and still looks new. I have many more now but that was my first Global and what a knife it is.

The ergonomics and looks alone would sell these knives but couple that with their edge holding and incredible sharpness and they are truly the Ferrari of knives. They offer a perfect nonslip grip for any size hand and the balance and light weight make using them a a breeze. Also the metal storage block not only looks cool but will not dull your knives like a wood block does. BONUS.

Considering that you will be passing on these knives from generation to generation the cost should not be a serious concern. There are no handles or bolsters to break (or gather germs) they are one piece of perfectly balanced steel. If you take reasonably good care of these knives they will last you a lifetime of hard use and your kids lifetime too. My Globals have chopped, peeled and sliced for literally hundreds of thousands of people. I seriously doubt most of you will put them through that. But it is good to know that they will take it in stride.

I even take mine on vacation with me, not all of them just the basic kit I refuse to cook without them. We take long vacations and know we eat better at the rented home or villa than at most of the restaurants in what ever area we are in. One of the perks of being a Chef, don't worry we still give the finer eateries a spin it is a vacation after all. The locals have to eat too!

You will thank yourself everytime you use these knives, if you know a foodie you really care for get them at least a starter set as a gift. They will love you for it and you will get more great food out of them too.

Life is too short to use cheesy knives! You know the ones.
